- 2 medium zucchini
- 1/2 c whole wheat flour
- 1/4 tsp curry powder
- 1/4 tsp salt
- 1/4 tsp garlic granules
- 1/4 tsp onion granules
- 2 Tbs water
- 1 Tbs flax seed
- Olive oil for frying

1. Put flax seed and water in blender and process on high speed for 2 minutes. Set aside in a bowl(gives it time to congeal).
2. Cut the zucchini into spears and set aside.
3. Combine the dry ingredients in a mixing bowl and stir to mix.
4. Dip each spear in flax mixture and then in the flour mixture; then place in an oiled and heated frying pan.
5. Fry until brown on all sides.
